How Long to Cook Ribs Low and Slow

I've been really craving a nice rack of slow grilled baby back ribs lately. I didn't want to cook them in the oven and finish them on the grill like I've done in the past. I really wanted to get than beautiful smokey grilled flavor really set into the baby back ribs. The craving had to be satisfied.

The best part of summer is grilling. I go through so much propane from grilling and the kitchen stays semi-clean for 3 months. So that's a huge win!

And yes, I've been long converted to a propane guy. I like to taste the meat, not the heat (in my hank hill voice). OK, honestly I prefer both, but most apartments look down on charcoal grills.

You can't go wrong with wood either. Traeger graciously sent me their Pro Series 34 Pellet Grill recently, and this option works quite well with this recipe. A smoker basket works will in a traditional grill. But you can't go wrong with wood burning for the whole time your ribs cook!

It's honestly the best to be grilling it up in the backyard low and slow at 225 F, with the kids playing in the back yard (or in my case a small patio), and having a cold beer by your side.

I used my tried and true texas style barbecue rub for this one. I have another rub in the works, but sometimes when I have a craving I need to just play it save and go with what works! I let it sit in my Traeger for about 5 hours or so at 225, until the internal temperature of the ribs hit about 195-205F.

You can achieve the same on your grill with a smoker box, but if you're looking for a hands off experience this is the way to go!

in the last 30 minutes, that's when the magic happens. Turn up the heat to about 450, then mop on a little sauce and turn every 2-3 minutes. I also like to put a little more on before serving just for good measure!

Try out my barbecue sauce to if you have a chance, if you want to keep it simple and go with store bought, I also recommend Stubb's [affiliate link] . I went with their sweet heat for this time around, because I love my spicy!

Low and Slow Grilled Baby Back Ribs

Prep Time: 10 minutes

Cook Time: 7 hours

Total Time: 7 hours 10 minutes

Servings: 2 people

  • 1 rack baby back ribs
  • 1/2 cup Texas Style BBQ Rub
  • 1 cup barbecue sauce
  • Preheat your grill to 225F. while it's preheating take your ribs and turn them over, bone side facing you. With your finger, slide it between the membrane and the meat and begin to pull up. once you have grip, the membrane will pull all the way off in one pull.

  • take a liberal amount of the Texas Style BBQ rub and coat the ribs on each side. Place over indirect heat on your grill.

  • Monitor your grill over the next 5-6 hours and make sure the temperature stays around 225. If you're using a traditional grill feel free to add wood chips in a smoker box. Cook until the internal temperature of your ribs are around 190-200F. They should droop in the shape of U when you lift them with a spatula, but not break.

  • After your done slow cooking, turn the heat up to about 300 F. Mop barbecue sauce on the ribs turning every 5-10 minutes. Take off the grill and let rest for about 5 minutes. Serve and enjoy!
